This is one of the most staunchly traditional producers of fine wine found anywhere in the world. If the vintage is not good enough, no wine is produced. If it is good enough, then no expense is spared.
This wine is not rushed, and can be hugely long-lived. It can stay in oak barrels for over a decade before it's even in bottles. Monfortino sees a minimum of seven years and the Cascina Francia a minimum of four years in large wooden vats (similar to the foudres of Chateuneuf du Pape).
