Salted Caramel Brownies (BI Bakers Dozen Round 2)

After the trials and tribulations that was week one – the Smash and Bash Cupcakes – it was a revelation to find that we would at least get one bake from the BI Bakers Dozen. For round 2, Emma made some scrumptious Salted Caramel Brownies. Read on to see how she got on and which pairing Isabel chose to accompany it.

Mishaps

With the chocolate, I decided 50% and 70% cocoa solids were way too healthy for a Friday afternoon bake, so I chose a combination of dark, milk and white chocolate chunks to make it more decadent.

All in all, the recipe was easy to follow and pretty straight forward, however the problems arose when baking. The recipe states to bake the brownies for 25–30 minutes and, as my oven gets super-hot, I thought I would bake them for only 15 mins before checking on them. When I went to check they were most definitely well baked and starting to burn so I quickly grabbed them out, took one look at them and wanted to cry! They weren’t jiggling with a firm top crust as stated above. So I covered them with tin foil and was done with them for the night.

After a restless night worrying, I awoke the next day and had to face the dreaded burnt brownies. To my surprise, when I pulled back the foil they had changed into actual brownies and no longer looked like a cake tray bake – TA-DAH! I trimmed off the slightly burnt edges, cut them into squares and we were back in business.

A note from our Spirits Guru, Isabel

The brownies were deliciously rich and I’m pleased to say they were not too dry. The salted caramel in the brownies worked extremely well with a wonderful 21-year-old single cask Armagnac I had in my private collection. Having told the other BI Bakers to bring a glass to refresh their palates, the accounts department were enjoying it by the pint it seems so I can only apologise to anyone who did not get paid last Friday.
